Aged for 9 months in oak barrels, the aroma of flame-roasted mild peppers, citrus, and fresh cucumber skins greet the palate. Hints of chai spices and ginger are brought forth on a smooth, mellow finish with subtle notes of vanilla bean. Master distiller Enrique Fonseca employs a unique technique for Purasangre, first distilling the earthy Atotonilco El Alto agave in stainless steel alembic pot stills, followed by a second distillation in copper pots. The result is a rich and balanced tequila with a distinct Atotonilco agave flavor, thanks to the 5,200' elevation of the region. Following Casa Xalixco's preference, the Reposado variety is aged in French oak casks.
