Origen Raiz Cenizo is crafted by the renowned mezcalero Ignacio Grijalva Santiago (Don Nacho), who relocated to Durango with his family to run the Rancho El Ojo palenque. Cosme Gabriel Simental is a fellow mezcalero in charge of production, while Noe Ramirez Varela also contributes to the mezcal. Bottles from this palenque all come from the Rancho El Ojo - a remote, wild space filled with Agave durangensis, Sotol and Nopal plants at 6,350 feet elevation, near Sierra de Órganos National Park. Crafting follows a time-honored process - underground-smoked ovens, mule-drawn tahonas for crushing, open-air oak tanks for fermentation, and double-distilled copper stills.
