Excellia's one-of-a-kind maturation process involves separately aging each batch in barrels from two premier regions in France: Cognac and Grand Cru Sauternes. The Sauternes casks, which have only been used once for a vintage (3 years), impart a swift infusion of elegant, sweet, fruity notes to the tequila. Meanwhile, the cognac barrels, which have held juice for over two decades, add a complex depth of aroma that slowly permeates the tequila. After blending, the master distiller combines batches from both maturation styles to craft Excellia tequila. Distilled at La Altena distillery, Excellia Anejo Tequila is matured for 15-20 months in Sauternes and Cognac barrels and bottled at 40% alc/vol.
