Distilled by Juan Hernández Méndez;fermented naturally in open-top wood vats and distilled in a copper alembic still. A blend of 50% Tepeztate and 50%Tobalá. Tepeztate is front-and-center here,tempered by the smooth caramel notes ofTobalá. On the nose,this is a verdant, precise and clean combination of grass and rain-washed limestone; pear, peppercorn and minerals come through on the palate.
