Ánimas Mezcal Espadin is carefully crafted by various skilled mezcaleros in Santiago Matatlán and San Juan del Rio, Oaxaca. The agaves are harvested after 8-10 years, then cooked in a traditional conical ground oven and milled with a tahona. The fermentation takes place in wooden vats and the final product is double distilled in copper pot stills, resulting in a meticulously crafted and authentic mezcal.
