This mezcal was crafted at Alberto Martinez and Reynaldo's remote distillery in Santa Catarina Albarradas, situated at a remarkable 7500 ft. above sea level. Capón refers to a specific process where the quiote, or agave stalk, is left in the field long enough for its sugars to become exceptionally sweet. This batch has a nose of ripe fruits, cake frosting, and herbs. The pallet exhibits creamy sweetness, touch of butter, and candy apple flavors. The finish is reminiscent of baked pie with mineral and cinnamon accents.
