Los Javis Cerrudo is created with a single maguey variety, Cerrudo, from Santiago Matatlan, Oaxaca. To produce this mezcal, the agaves were slowly roasted in an underground oven, then crushed with a horse-drawn tahona. Open-air yeasts were used for fermentation before the liquid was distilled twice in a copper pot still.
