El Rey Zapoteco has been an established brand in Oaxaca since the 1960's, steeped in a tradition of artisanal Mezcal production. Agave are cooked in underground ovens for 4-7 days, ground with a tahona pulled by horses, fermented with natural yeast in the open air, and double-distilled in copper stills. The final product is aged in white oak barrels for 10 months before being bottled.
